Cucumber & Mint Raita

Our friends at My Market Kitchen have helped us create this tasty Cucumber & Mint Raita, the perfect pair to our yummy Jenny Craig Butter Chicken.

Serves: 6

You will need:

  • 1 cup plain fat free Greek yoghurt*
  • 1 small cucumber, finely diced
  • 2 tbsp chopped fresh mint leaves
  • 1 tsp fresh grated ginger
  • 2 tsp fresh lemon juice
  • 1 tsp of a mix of fennel, mustard, cumin and turmeric powder

Method:

  1. Combine yoghurt, cucumber, mint, ginger, lemon juice and spice mix in a medium bowl. Stir well.
  2. Cover and refrigerate for 1 hour to allow flavours to blend. Serve with Jenny Craig’s Butter Chicken!
