Serves: 6
You will need:
- 1 cup plain fat free Greek yoghurt*
- 1 small cucumber, finely diced
- 2 tbsp chopped fresh mint leaves
- 1 tsp fresh grated ginger
- 2 tsp fresh lemon juice
- 1 tsp of a mix of fennel, mustard, cumin and turmeric powder
Method:
- Combine yoghurt, cucumber, mint, ginger, lemon juice and spice mix in a medium bowl. Stir well.
- Cover and refrigerate for 1 hour to allow flavours to blend. Serve with Jenny Craig’s Butter Chicken!
