Grilled Zucchini, Tomato & Onion

Ingredients

  • 1 large onion, sliced
  • 4 medium tomatoes, sliced
  • 2 zucchini, sliced
  • Spray oil
  • Fresh mint, to garnish

Method:

1. Lightly coat a non-stick fry pan or griddle with spray oil.

2. Add the onion, tomatoes and zucchini slices and grill over high heat for 3-4 minutes each side, or until the vegetables are charred on the outside and al dente on the inside.

3. Season with freshly cracked pepper and garnish with fresh mint leaves. Enjoy!


Cook’s tip: 

As a variation, season with thyme or oregano.
