Ingredients:
Salad
- 2 cups mixed salad leaves
- 1 orange, peeled and sliced into thin rounds
- ½ fresh beetroot, thinly sliced
- 2 radishes, thinly sliced
- 40g feta cheese, crumbled 1
- tsp chives, finely chopped
Dressing
- 1 tsp Dijon mustard
- 2 tbsp lemon juice
- 4 tbsp water
- Pepper to taste
Method:
- Place the mixed salad leaves onto a plate and top with sliced orange, beetroot, radish, feta cheese and chives.
- Prepare the dressing by mixing the Dijon mustard with lemon juice, water and pepper.
- When ready to serve, pour the dressing over the salad and toss to combine.
