You’ll find two lunches and two dinners that could just be the perfect additions to your next ‘Meat Free Monday.’ Did you know, following a vegetarian diet even for just one day a week, can help reduce greenhouse gas emissions and preserve our land, water and energy supplies. Whilst helping the environment, vegetarian meals also offer an abundance of nutrients.
Raspberry Cacao Crunch
Who doesn’t like a hint of chocolate in their cereal? Our Raspberry Cacao Crunch is packed full of oven baked clusters of oats, seeds and cacao, with sliced almonds and crumbled raspberries. This cacao delight will be sure to please your cravings, serve with half a cup of fresh raspberries from your Limited Free Foods to add colour and volume to this delicious breakfast. For a refreshing start to your day, this cereal is a great topping for our Raspberry Yoghurt Soft Serve.
Tomato & Basil Omelette
Introducing the Tomato and Basil Omelette, it is the perfect start to your weekend. Enjoy this whole egg omelette with tomato, mozzarella cheese, spinach and a hint of basil, serve with sautéed mushrooms and roasted cherry tomatoes on a bed of fresh baby spinach. Moroccan Grain Salad
Trust us, this is one delicious salad! The Moroccan Grain Salad contains lentils, couscous and freekeh with a mildly spiced orange dressing and is great served cold or warm. Serve alongside our Warming Roasted Salad, with capsicum, eggplant, onion, carrot and cherry tomatoes, or stir though fresh baby spinach.
Sweet Potato Frittata
Our Sweet Potato Frittata is an egg-cellent lunch option. A tasty whole egg frittata with sweet potato, caramelised onions and cheese, what’s not to love about it! We like serving it with a refreshing side salad of cucumber, capsicum, basil, lime and chilli, you can find the recipe on our blog, or accompany with your favourite leafy green salad.
Gnocchi with Napoli Sauce
One serve of gnocchi coming right up! Potato gnocchi in a tasty Napoli sauce with sweet potato and topped with a combination of parmesan and cheddar cheeses. For a tasty dinner, serve with a side salad of red and yellow cherry tomatoes, freshly chopped basil and a drizzle of herb vinegar. The gnocchi is also great with our Super Green Salad, including your favourite mixed lettuce leaves, cucumber, asparagus, snow peas and basil.
Leek & Cheese Quiche
Oh my quiche! The Leek and Cheese Quiche is a delicious, crisp shortcrust pastry, filled with fluffy whole eggs, cheese and leek. Enjoy your quiche served with rocket, cherry tomatoes and balsamic vinegar, or try our crispy cauliflower, seasoned with turmeric, garlic and onion powder, check out the recipe here.
