These tasty Kale Chips & Lychee Mojitos recipes are the perfect refreshment.
Lychee Mojito Mocktail
Serves: 1
You will need:
- 2 lychees (fresh or canned)
- 2 wedges lime (½ lime), plus an extra wedge to garnish
- 2 tsp natural sweetener eg. stevia
- 2 sprigs mint leaves, plus mint to garnish
- ½ cup ice
- 1 cup plain sparkling/mineral/soda water
Method
- Peel lychees and remove seeds (if using fresh lychees).
- Muddle lychees, lime, natural sweetener and mint leaves in the bottom of a glass.
- Add ice and top with sparkling/mineral/soda water. Stir to combine.
- Serve with an extra sprig of mint and a wedge of lime.

Kale Chips
Serves: 2
You will need:
- 2 cups kale
- Extra virgin olive oil spray
- Squeeze lemon juice
- Pinch cayenne pepper
- Pinch salt
- Pinch black pepper
Method
- Pre-heat oven to 150°C.
- Roughly tear kale leaves up into chip size pieces, removing stems. Place in a single layer, not touching, on an oven tray lined with baking paper.
- Spray kale lightly with oil.
- Squeeze lemon juice over the top and sprinkle with cayenne pepper. Season with a pinch of salt and freshly ground black pepper.
- Bake in the oven for 5 – 7 minutes then turn the tray around and bake for another 5 – 7 minutes. Keep a close eye on the kale that it doesn’t burn! Remove from the oven and leave to cool for a couple of minutes before serving.
Note. You can be as creative as you like with the seasonings you choose to sprinkle over the kale. Why not try garlic powder, onion powder, sumac, harissa or zaatar.
