Serves: 4
Preparation time: 20-30 minutes
Ingredients:
- Half a head of Cauliflower
- Spray oil
- Seasoning of your choice (we recommend ground turmeric and pepper)
- 4 Tablespoons low fat natural yoghurt
- Juice of half a lemon
- ½ cup of Fresh herbs (we recommend parsley and coriander)
Method:
- Cut up your cauliflower into florets and lay on an oven tray (you can even use your Air fryer if you have one). Lightly spray with oil, season with your spices and roast in oven for 20-30 mins at 180 degrees (10-12 mins if using the air fryer).
- While cauliflower is roasting, prepare your yoghurt dip by combining yoghurt with lemon juice, season with pepper and toss through fresh herbs.
- Transfer roasted cauliflower to a serving dish and accompany with yoghurt dip.
Serve with: Jenny Craig Moroccan Grain Salad
Tip: Don’t throw cauliflower stalks out. They have a delicious sweet taste when roasted and make a great addition to this salad.
